My scratch Pasta Sauce recipe. It's very easy to make and most importantly you can get creative
with this.
4 lbs fresh Roma tomatoes. (Wash and put in boiling water
for about 1 minute. Follow this with cold water. Then you can easily remove the peelings by hand. Chop tomatoes into small chunks.)
2 medium onions, chopped
4 cloves garlic, chopped
1/4 cup fresh basil, chopped
1/4 cup olive oil
1 teaspoon salt
4 sprigs parsley
1 tablespoon sugar

Heat olive oil over medium heat in a large saucepan. Add
onion, basil, garlic and salt and saute until onion is tender, approximately 5
minutes, stirring constantly to prevent scorching.
Add tomatoes, parsley and sugar; heat to a boil; reduce
heat and simmer, uncovered for about 2 hours, stirring often or until sauce has
thickened.
Remove parsley.
